New Merchant Spotlight: Rye Deli & Drink Opening Thursday, November 19
Greektown is excited to welcome a new restaurant to the neighborhood this month, Rye Deli & Drink! “Built from the grain up,” Rye Deli & Drink is not your traditional Jewish deli – it reimagines old-school deli flavors with a modernized approach.
The concept for Rye comes from the shared vision of Billy Caruso, chef and facilitator (24 Diner, Easy Tiger Bake Shop & Beer Garden, Hudson’s On The Bend), and Jeremy Vass, general manager (Chicago III Forks, Bel Air Country Club). Rye takes aspects of a classic Jewish deli and combines them with contemporary cooking methods to provide a unique range of offerings, with staple menu items like the eight-hour cold-smoked salmon. Using high-quality ingredients and homemade and handmade techniques, the menu expands beyond bagels and pastrami to highlight a variety of shareables, soups and sandwiches made with smoked meats, vegetables and fish.
Mirroring the restaurant’s creative yet classic character, Rye’s beverage program complements its specialty menu. Fueled by Vass and Caruso’s backgrounds as certified sommeliers, the pair used their expertise to curate an eclectic wine list, spotlighting picks with great value. Rye’s seasonal cocktails are available to order individually or in bulk, and can be enjoyed either during in-person dining or to-go experiences. The beer offerings are made up of eight draft lines, featuring a rotating mix of local, seasonal, craft and rare brews.
Located at 25 S. Halsted St., Rye Deli & Drink is scheduled to open its doors to the public on Thursday, Nov. 19. Rye’s hours are 8 a.m.-3 p.m. on Thursdays and 8 a.m.-6 p.m. on Friday, Saturday and Sunday.
